Birthday Bruschetta

Hello darlings,


   This is Hannah, and I am super excited right now, my first offical post!!


Rachel's 14th birthday was Sunday the 18th of April.  Didn't get a chance to make her a birthday dinner until tonight.  She requested Bruschetta.


Bruschetta, is an appetizer whose origin dates to at least the 15th century from central Italy.  It consists of grilled bread rubbed with garlic and topped with extra-virgin olive oil, salt and pepper.  Variations may include toppings of spicy red pepper, tomato, vegetables, beans, cured meat, and/or cheese; the most popular recipe outside of Italy involves basil, fresh tomato, garlic and onion or mozzarella.

The recipe I used called for cubed Tomatoes, Parmesan Cheese, dried Basil, Olive Oil, salt, and pepper.  I mixed it all together in the morning, cover and refrigerated it until dinner time.  Sliced some French Bread, for Rachels, and Spelt bread, for myself, and broiled the bread on a cookie sheet until it felt crunchy and was brown around the edges.  Flipped the bread slices over and placed about a tablespoon and a half of the bruschetta mixture on top.  Sprinkled a bit of mozzarella cheese on top and broiled it until the cheese had melted. I also served grapes and salad.












I do believe the birthday dinner was a success.

  1. Oh my, that meal looks so scrumptious! I absolutely adore bruschetta! mmmmmmm - I got hungry just looking at it and it's too late to do anything about it. Oh dear!
